Piglet or Lamb (baked under the bell)

A roasted piglet or lamb is a delight that cannot be missed at any bigger festivity in Bela Krajina. A piglet is baked above hot coals in one piece, and the divine taste hits when its skin starts to crack. The people of Bela Krajina also prepare young lamb in a similar way on a spit. Fresh bread, young onions, tomatoes and other seasonal vegetables are a good side dish to both types of meat. Following an old tradition, both specialties are being prepared for hours in the open or in a brick oven, so the preparation of a piglet or lamb is considered an exceptional social event.

In different Slovenian regions, “žlinkrofi” are prepared in various ways. The most famous ones are those from Idrija, which differ from those in Bela krajina by their filling. The tiny pockets are usually filled with a mixture of chicken and beef, roasted onion, breadcrumbs and parsley. The žlinkrofi are cooked for about 15 minutes and then served on chicken’s fat or butter.

Nothing welcomes you to Bela krajina as warmly as the aromatic white bread shared with you by the locals. Belokranjska pogača is a round doughy delight, sprinkled with coarse salt and caraway, with which locals welcome you. Pogača is never cut, but shared with you in a traditional way by breaking off pieces. Belokranjska pogača is protected as a guaranteed traditional speciality and has the EU certificate indicating a dish with a protected designation of origin.
